Pear Pie & Red Wine Pear
The smell of freshly baked shortbread and cinnamon red grapes fills the bakery as Catherine cooks.
Newly harvested fruits are the last fruits of the golden season. The so-called “summer pears” are available in Austria from August, while the autumn and winter pears are available from September. The fruit is incredibly versatile and can be eaten as a raw fruit snack, but can also be made into smoothies, cakes, compotes, chutneys and more. In this recipe, pearls are used twice Shortcrust pastry pear with red grapes On top of the yogurt mascarpone cream.

For red grapes:
4 capsules
¾ l red wine
50 grams of sugar
Squeeze ½ organic lemon
1 cinnamon stick
For cream:
100 grams of yogurt
200 grams of mascarpone
A little cinnamon and sugar
For the pear cake:
150 grams of cold butter
250 grams of flour
2 tbsp sugar (corresponds to 30 g)
100 ml cold water
5 capsules
1 tbsp lemon juice
to fill
250 g of mascarpone
100 ml of cream
1 egg (size L)
3 tbsp sugar
