Speculos cake recipe: cream and cream at the same time

Speculoos crackers form the basis for a solid base. The soft cream covers the cake in a delicious way and the tangerines give a special touch to this masterpiece. Try it and dare to make this cake dream. worth it! To the mixing bowl, set, go!

you need:

  • 125 grams of flour
  • 100 grams of sugar
  • 100 g speculos
  • 3 eggs
  • 1 teaspoon baking powder
  • 1 cent salt
  • 6 sheets of gelatin, white
  • 900 ml of cream
  • 2 small cans of tangerines
  • 2 packs of vanilla sugar
  • 100 grams of flour

for decoration

  • Canned tangerines
  • Pomegranate fruits
  • Cinnamon sticks

And this is easy:

1. First, crumble 50 g speculoos. Separate the eggs. Beat 3 egg whites with 3 tablespoons of cold water and a little salt. Slowly pour in the sugar. Then beat the egg yolks one by one.

2. Now sift the flour and baking powder and add to the rest. Fold the speculos crumbs and half of the dough. Pour the dough into the spring form covered with baking paper and 180 degree air circulation for about 20 minutes Bake.

3. Drain the rice. Dissolve the gelatin in 3 tablespoons of water. Beat 700 ml of cream with vanilla sugar until stiff. Drain the gelatin and then dissolve it according to package directions. Now stir in 2 tablespoons of cream and add everything to the rest of the cream. Fold the tangerine into the cream together with the rest of the crumble, leaving a little of the rest for decoration.

4. Cut the frozen base in half horizontally to make two bases. Place the cake ring on the first base and spread the cream mixture on it. Cover with second soil.

5. Whip the remaining cream and spread it on the second base and decorate it with the remaining tangerines. Sprinkle with pomegranate seeds and garnish the cake with a few cinnamon sticks.
